450g 100% wholemeal flour or spelt
1 sachet dried yeast
1 tbsp of sugar (pref unrefined - can be omitted quite easily)
1 tsp salt
1tsp ground cinnamon
1 tsp ground nutmeg
50g sultanas or raisins
2 small bananas, mashed
1 medium-sized cooking apple, cooked and mashed
Grated rind of 1/2 lemon (not essential)

Put all the dry ingredients in a bowl and stir, then stir in the apple and banana, beating well. The mixture isn’t like a bread dough, more like a very thick cake mix so don’t worry if it seems a bit wet. Put mixture into a 2lb loaf tin (or 2x 1lb) and leave in a warm place to rise until mixture reaches top of the tin (about 45 mins- 1 hour). Bake at 190C (375F, gas 5) for about 35 minutes.

You can add nuts to this too if you fancy them, also you don’t have to be too strict about the spices - you can use mixed spice if you want to. I have left the sugar out without any problems.
