* 250g unsalted butter
* Grated rind of one orange
* 225g golden syrup
* 375g rolled oats
* 75g light muscovado sugar

Preheat oven to 180C/350F/Gas mark 4. You need a tin of about 28×20cm which you grease and line with baking parchment.

Put the butter, orange rind, golden syrup and brown sugar in a pan set over a low heat and stir until the butter has all melted and everything is nicely mixed together. Then add the oats to the pan and mix it together. Tip the whole mixutre into the tin and spread out evenly.

Cook for 15-20 mins. Don’t overcook or you will lose the lovely chewy texture. You know it’s done when it’s *just* beginning to go golden brown around the edges but don’t panic cos the mixture will still be really soft.

Leave it in the tin to cool completely and it will set. Don’t be tempted to take out before it’s cool. When it is, lift the whole thing out of the tin, holding the edges of the baking parchment and cut into slices as desired.
