* Chicken pieces or leftover whole chicken (I use two chicken legs)
* Butternut Squash
* 2 red peppers
* 1 Onion or 2-3 Leek
* 2 handfuls of brown rice
* Chicken stock cubes (I like Kallo organic)
* Single cream
Put chicken in pan and cover with water (you can even do this straightaway with frozen chicken pieces but you need to boil them about 45 minutes longer) bring to boil and simmer for at least 30 mins. Add chopped veg and rice and top up water if necessary to cover all the veg and chicken.
Simmer for at least 40 minutes more then liquidise some and add back to soup to make a lovely thick soup, then stir in single cream to taste (I think I used about 70ml).
Eat with yummy crusty bread and butter!
