75g glace cherries, roughly chopped
50g crystallized ginger, chopped
50g candied peel, chopped
100g sultanas
3 tablespoons of brandy
3 egg yolks
75g granulated sugar
300ml double cream
150ml milk
1 teaspoon ground mixed spice
50g toasted almonds, roughly chopped

Mix the cherries, ginger, candied peel and sultanas in a bowl, then pour the brandy over the fruits and set to one side for 2-3 hours to soak, stirring occasionally. Whisk the egg yolks and sugar in a mixing bowl until pale. In a saucepan gently heat the cream, milk and mixed spice until almost boiling, then pour in a steady stream over the sugar and yolks, whisking as you do so. Return the mixture to the pan and cook, stirring all the time until the mixture thickens. Remove from heat and leave to cool completely. Put in ice cream maker and just before the end, add the fruits and nuts to mix in.
