* 60g/2oz rolled oats
* 90g/3oz oatmeal
* 90g/3oz wholewheat flour
* 125g/4oz desiccated coconut
* 90g/3oz raisins (optional)
* 30g/1oz sunflower seeds
* 30g/1oz sesame seeds
* 75ml/5 tbsp oil
* 125ml/5 fl oz apple juice
1. Put all dry ingredients in a bowl and mix thoroughly
2. Stir in oil a little at a time until thoroughly mixed
3. Slowly stir in apple juice till the mixture forms a firm dough
4. Roll dough out on a floured surface to about 1cm thick and cut into rounds with a pastry-cutter. If any raisins find their way to the surface, push them back inside the dough or they may burn.
5. Bake on a greased baking sheet in the middle of a moderate oven (177C/350F/Gas mark 4) till they go golden brown (about 20-30 mins)
6. Allow to cool on a rack before serving
Makes a dozen
NB: We made these last night and had to share! Just wanted to note that we replaced most of the oil with milk (this recipe is from a vegan book) and they still worked OK. Enjoy!
