* 175g butter (softened)
* 175g caster sugar
* 2 eggs
* 4 table spoons milk
* 175g whilt mill self raising flour
* grated zest of 1 unwaxed lemon
* juice of lemon
* 1 table spoon icing sugar

cream together the butter and sugar. gradually beat in eggs and milk. fold in flour with lemon zest. spoon the mixture into a greased 2lb loaf tin and bake for 55-65 mins at 180c, 350f or gas mark 4 until golden brown (i find it needs more like 50mins)

mix lemon juice and icing sugar (you may need extra sugar)to make a thin paste. poor over kace as soon as it is removed from oven. alow the glaze to set before removing from the tin. set on a wire reack to cool completely.
