* 7 oz SR flour
* 8 oz caster sugar
* half a teaspoon salt
* 1 oz cocoa
* 4 oz butter
* 2 eggs beaten with 5 tbsp evaporated milk
* 5 tbsp water
* few drops of vanilla essence

* for the milk chocolate icing;
* 2½ oz butter
* 1 tbsp cocoa
* 9 oz sieved icing sugar
* 2 or 3 tbsp hot milk
* 1 tsp vanilla essence

Method :
Sieve flour, sugar, salt and cocoa. Rub in butter. Stir in eggs,essence and liquids, beat well. Grease and flour 2 x 8 inch tins (not loose bottomed as mixture would run out) Divide the mixture between them and bake in a moderate oven 180ºC, 350º ,Gas mark 4 for about 30-35 minutes. When cold, cover and sandwich with milk chocolate icing. To make icing ; Melt butter,blend in cocoa. Stir in icing sugar, milk and essence. Beat until smooth and thick.
