* 1 1/4 cup of superfine wholemeal flour or spelt flour
* 1/2 tsp bicarbonate of soda
* 1 tsp of cream of tartar
* 1 egg
* 1 1/4 cup of soya milk, (or semi-skimmed milk if not dairy free)
* 1 cup of sun dried raisins
* 2-3 ripe bananas

Sieve the flour with the bicarbonate of soda and the cream of tartar and discard the flour bits that won’t go through, (even if it seems quite a lot). Mix in the egg and add the milk slowly to create a batter. This can be made in advance if preferred. Make it last thing at night, cover and put it in the fridge and it is all ready to make pancakes for breakfast. Tip in the raisins and stir well. Using a dessertspoon, spoon the mixture into a very hot, dry, non-stick frying pan. When bubbles appear on the top of the pancakes, flip them over to cook them on the other side. This can take as little as a minute, depending how hot the pan is.
Once cooked place on a serving plate and do the next batch until all the batter is used. Mash the banana in a bowl and serve the pancakes with the banana which they can spread on the pancakes for themselves. Delicious for breakfast or as a pudding.
