* 50g oatmeal
* 175g wholemeal flour
* 2 level teaspoons of baking powder
* 95g diced butter
* 3 level tablespoons of caster sugar (Charlotte you can leave this out!)
* 3 tablespoons of milk
* plain flour for rolling
* salt if you are making for you/older kiddies
You need two baking sheets lined with baking parchment. NOTE they can stick if you don’t used actual baking parchment. If you don’t have any then you can oil the trays but don’t blame me if they stick!!
Preheat oven to 200c/400F/G6
Sift the oatmeal, flour, baking powder and salt if you’re using into a large bowl. If you get any big bits of oatmeal left in the sieve just chuck them in too. Add the butter and sugar and rub together till looks like breadcrumbs. Pour in the milk and continue to mix until all is moistened. Draw it together lightly, don’t overknead, but treat it gently, like a lover on a first date.
Turn onto a lightly floured surface, cover with a bowl and leave to rest for ten minutes.
Then, flour a rolling pin and roll out dough to about 5mm (who measures?) then cut into whatever shape you want or have cutters for.
Prick three times with a fork and cook for about 10-12 mins. Don’t overcook, they should be gently browned (although hard to tell). Leave for about 3 mins to cool on tray before gently lifting off with a spatula and leaving to cool on a wire rack.
