* 6 medium potatoes
* 1 tin salmon (or tuna)
* a few spring onions/couple of shallots
* 1 head of brocolli
* parsley/dill (optional)
* 1 beaten egg
* fresh wholemeal breadcrumbs (about 3 slices of bread!)
* Makes about 12
Cook potatoes and brocolli in your usual way (I steamed them for max nutrients) until mashable (a bit softer than perhaps you normally would if you don’t like squishy veg)
Gently fry spring onions or shallots until soft.
Open can of fish!
Mash all of the above together and add fresh parsley or dill if you fancy it or have it lying around. The mixture can be fairly lumpy.
Shape into balls a bit bigger than a golf ball, then flatten a bit to be about 2cm thick.
Dip each cake in beaten egg and then into breadcrumbs and fry, or grill until brown and crispy on outside
Obviously you probably can’t fry them all at once, so you can keep them warm in the oven whilst you make the rest
We had the leftovers the next day on pittas with mayonnaise and rocket. Delicious.
