* 125g unsalted butter
* 100g high cocoa content chocolate
* 300g good, thin cut marmalade *
* 150g caster sugar **
* a pinch of salt
* 2 large eggs, beaten
* 150g self raising flour

* * I made this with home made marmalade once and I have to say it wasn’t as nice as when made with the shop bought stuff. I think home made marmalade can be less sweet/more severe.

This is a really simple cake.

Preheat the oven to 180C, grease and flour/line a 20cm spring form cake tin or use a paper liner which makes life so much easier! (www.lakelandlmited.co.uk sells them).

Melt the butter over a medium heat, just before it melts, add the broken into piece chocolate, stir and take off the heat.

Then stir in the marmalade, sugar, salt and eggs. Beat in flour a bit at a time, put in tin then bake for 40-45 minutes. Don’t overcook so start checking after about 35 mins.

It’s done when a skewer comes out clean and the top is firm but still has the tiniest amount of squidgey give to it.
