* 1 Red Pepper
* 1 Red Onion
* 1 Clove Garlic
* 1 Tin Chopped Tomatos
* Olive Fry-Lite Spray Oil
* Italian Mixed Herbs
* Salt & Pepper to taste

Spray a frying pan liberally with Fry-Lite oil. Finely chop the onion and add to the pan. Fry for a few minutes then crush the garlic and add. Whilst those are frying chop the pepper into small pieces, then add to the pan. Fry all of these together (you may need to add more Fry-Lite) until they look cooked.

Get a large saucepan and tip the fried veg into it, then add the tin of tomatos. Put on a low heat and add the herbs to taste (I like to add alot), then season with salt and pepper. Cook until it’s bubbling and then blend the mixture to reduce lumps.

Serve with pasta and grated cheese.
