* 1lb unbleached plain white flour
* 1 tsp baking powder
* 3/4 tsp fine sea salt
* 225g greek yoghurt
* 5 tablespoons melted butter
* 2 large eggs, beaten
* 85g clear runny honey
* 3 tbsp chooped fresh basil and thyme
Preheat oven to 180 dec C/350 deg F/Gas 4. Lightly grease and flour a 20cm x 20cm baking dish.
Sift all dry ingredients together and make well in centre. In another bowl mix the yoghurt, butter, eggs, honey and herbs.
Put the yoghurt mixture into the well and mix thoroughly.
Pour into prepared dish and bake for 40-45 minutes, place on wire rack and allow to cool for at least 20 mins before serving otherwise texture is not very pleasant.
